Traditional Shortbread
Ingredients:
– 125g butter, softened
– 55g caster sugar
– 150g plain flour
– 45g rice flour
– Caster sugar to dust
Method:
Step 1: Beat the butter and caster sugar until pale and creamy, then stir in the plain flour and rice flour.
Step 2: Preheat the oven to 160°C and line a baking tray with baking paper, then draw a 20cm circle on the paper.
Step 3: Place your dough on the lined tray, and use the paper disc to roll the dough out to shape.
Step 4: Use your fingertips to pinch the dough to create a fluted edge, then score the dough into eight pieces, pricking each wedge twice with a fork.
Step 5: Sprinkle with sugar, then bake for 30 minutes or until golden brown.
