Recipe of the Month – Bacon Risotto

Here’s how you can make a delicious Bacon Risotto with just five ingredients, in just five steps…
– 6 bacon rashersMa
– 300g risotto rice
– 1L hot vegetable stock
– 100g frozen peas
– 50g butter
Step 1: Melt the butter in a pan, then add the chopped bacon rashers. Fry until crispy.
Step 2: Add the risotto rice and vegetable stock, and bring to a boil.
Step 3: Stir well, then reduce the heat. Cover, and cook for 15-20 minutes.
Step 4: Stir in the frozen peas, and cook for another 3 minutes.
Step 5: Serve sprinkled with black pepper.
