Recipe of the Month – Pesto Rigatoni

Everyone loves a pasta bake on these cold, winter nights.

Ingredients:

– 400g Rigatoni
– Jar of Pesto
– 300g Crushed Tomatoes
– 400g Mozzarella Cheese
– Freshly Chopped Basil

Method:

Step 1: Preheat the oven to 200°C, and bring a large pan of salted water to a boil.
Step 2: Cook the pasta according to the instructions, and then drain – reserving a cup full of some of the water.
Step 3: In a large bowl, place the pasta, pesto, crushed tomatoes, and pasta water – stirring to combine.
Step 4: Layer half of the pasta into a baking dish, sprinkle cheese over the top, then repeat with the second half.
Step 5: Bake for 20 mins or until bubbling, then serve garnished with chopped basil.
