Recipe of the Month – Red Pepper Linguine

November’s recipe of the month is here – a delicious Red Pepper Linguine.

– 1 roasted red pepper
– 30ml Olive Oil
– 50g Walnuts
– 1 Small Garlic Clove
– 100g linguine
– Optional: Parmesan to serve


Step 1: In a blender, blitz the red pepper, olive oil, walnuts, and garlic. Season well and then set aside.
Step 2: Add the pasta to a pan of salted boiling water, cooking for one minute less than the packaging states.
Step 3: Drain the pasta, retaining a cupful of the cooking water.
Step 4: Tip the pasta back into the pan along with the cupful of cooking water and the red pepper sauce.
Step 5: Return to the heat to warm through, and then serve.
