Recipe of the Month in January – Roasted Tomato Soup #NationalSoupMonth.

– Can of Crushed Tomatoes
– Vegetable Broth
– 1 Large White Onion
– 3 Tbsp Butter
– 3 Garlic Cloves


Step 1: Chop the onion and garlic into small chunks (the smaller the better if you prefer a smooth soup).
Step 2: Cook the onions in a pan with the butter; before they start to brown add in the garlic.
Step 3: Add the crushed tomatoes into the pan, followed by the vegetable broth, and mix everything together.
Step 4: Simmer and cook uncovered for half an hour.
Step 5: If you prefer a smooth soup, then you can put the soup into a blender.
